Green Bean Soup

If it takes longer than 5 minutes to prep it, i probably won’t cook it. So when i chucked the below into a slow cooker in less than a minute, although i was expecting a bowl full of health, i wasn’t expecting much on the taste scale. Thankfully, nothing goes wrong in a slow cooker and as a result, i can get my daily dose of greens and vitamins every lunch time. The cannellini beans are a great protein source, the onion and garlic are great for staving off colds & flu and when it comes to broccoli...what isn't it great for?!




4 x zucchini

2 x broccoli heads

2 x garlic cloves

1 x ltr veg stock

1 x onion

1 x can cannellini beans

Olive oil, salt, pepper, toppings.


Do it:

Roughly chop. Slow cook (either in a slow cooker or on the hob at low heat) for 3hrs or until soft. Add a glug of olive oil, season & whizz with hand blender until smooth. Top with hulled hemp, sliced avo, yogurt, corn chips....anything you fancy and serve with a slice of bread for a more filling meal.


Eat/freeze/yes please.
